We have been trying out a lot of different vegetarian recipes lately. For my husband, this is a little bit of challenge. He is a good sport about it. My kids are adapting well to the changes.
This is a really easy recipe for a cheesy oat pattie. I see lots of possibilities with it.
1 c. grated cheese ( I used a blend of colby jack and parmesan)
1/4 c. green pepper, finely chopped
1 small onion, finely chopped
1 c. oats ( I ground my oats slightly)
2 eggs, lightly beaten
1/3 c. plain flour
season to taste with garlic, salt, pepper, and Italian blend seasonings.
oil for frying.

1. In a bowl, combine cheese, pepper, onion, oats, eggs, and flour. Mix well. Divide mixture into 6 small portions and shape into patties.
2. Heat oil in a large frying pan. Add patties and allow to cook for about 3 minutes each side or until patties are golden brown.
3. Serve on a roll with favorite toppings.
The recipe makes between 4 and 6 patties depending on the size. For a little variation, make the patties by the recipe, then bake with a tomato sauce and serve with pasta. Or make the patties and bake them with a mushroom gravy and serve with rice and other vegetable.

I'm definitely going to give this a try - can't resist a good recipe using oats :) I bet these would be extra tasty with some fresh herbs from the garden mixed in!
