Mexican Bean Salad Recipe

 All this past week, we have been living outdoors it seems like.  We have loved cooking out, playing in the pool, and just enjoying summer.    I thought I would share a recipe that is great for cookouts or potlucks.    It is very easy to make with just a few ingredients.   Your guest will love it! Sorry for no pictures, it got eaten before I thought to take a picture. 


1 can of Mexicorn, drained
1 can of Chili Beans,  (drain some of the sauce, but not all)
1 can of olives
1 packet of taco seasoning
1 cup shredded cheese 
4 tsp. mayonnaise  ( you can use regular, low fat, or even vegan mayo, your preference) 
garlic, chili powder, salt, pepper, hot sauce  (season to taste)

1.  Drain your corn, beans, olives, and cheese.    Pour into mixing bowl.

2.  Add mayonnaise, taco seasoning, and spices to vegetable mixture.  Mix well.  Be sure to taste, because you may want to add more spice.

3.  Chill for at least 30 minutes before serving.  It really is better if you make the night before. 

4.  Serve with Frito corn chips.

You can also garnish with fresh avocado, lettuce, and tomato.
