From the garden- Cucumber & Mango Salsa



Gardens have started to come in, in full force! Which is great! I love veggies straight from the garden.
We have a lot of cucumbers coming in now. I love to make cucumber & mango salsa. So easy and delicious. Here is the recipe, if you would like to try it.


3 mangos peeled, seeded and diced
2 cucumbers peeled, seeded, and diced
2 jalapeno peppers, seeded and finely chopped
1 large onion, diced
1 clove garlic, minced
1/4 cup chopped fresh cilantro
1 tablespoon lime juice
salt and pepper to taste

Stir together the mango, cucumber, jalapeno pepper, onion, garlic, and cilantro in a mixing bowl. Season with lime juice, salt, and pepper. Refrigerate at least 2 hours before serving to allow the flavors to blend.

You can adjust the amount of spice you like. Just depends on your taste.

Sorry for no pictures, I forgot and it gotten eaten too quickly. I will be making another batch in a day or two. I will try to get one then.

  4. You can adjust the spice levels. It can be mild or super spicy. all depends on your taste.
