Terrific Tailgating- Weridest College Mascots

Today's tailgating post has to do with mascots. When you think of mascots, you automatically think of something strong, fierce, and menacing. Your first choice probably would not be a chicken or a vegetable.

I am from South Carolina. We are the proud home of the University of South Carolina. Their mascot is the Gamecock, or for short Cocks. That's right their battle cry is GO COCKS! and the mascot's name is Cocky. You can take that anyway you want. Believe me, we have heard all of the jokes.

So I did a little googling to find other weird mascots. Listology.com has a great list. Apparently, vegetables are wildly popular. These are some of my favorites. (and yes, University of South Carolina made the list)

1. Scottsdale Artichokes - Scottsdale Community College is represented my Artie the Artichoke.







2. The Univeristy of California, Santa Cruz adopted the Banana Slug. The slugs are native to the Redwood Forest.








3. Delta State Fighting Okras. The school is located in Mississippi. They actually have 2 mascots. The Statesman is the official mascot, and the Okra unofficially. But the Okra is wildly popular.








4. Evergreen State Geoducks "Gooey ducks" A gooey duck is "a species of large saltwater clam (Panope generosa) which is native to the northern Pacific coasts of Canada and the United States of America, that is, along the coasts of Washington state and the province of British Columbia. They live buried deep in the sand of ocean beaches, and feed on smaller sea creatures, sometimes reaching the age of 100+ years."





I have to give a shout out to Ole Miss. In recent months, there has been a movement to change the Ole Miss school mascot. School officials felt that Col. Reb was a bit too "old south" and want something else. It has been suggested by the students that Admiral Ackbar
from Star Wars: Return of the Jedi be made their mascot. You, see Admiral Ackbar is a member of the Rebel Alliance. There is no better choice to lead the Rebels of Ole Miss. Personally, being a huge Star Wars fan, I am in total support of this! I would even encourage my children to attend Ole Miss in the future. I appreciate a school with a sense of humor and am now an Ole Miss fan!

I am going to say chicken. I rarely, if ever eat pork and I rarely cook beef at home.

It is already Monday again!! I think I need 2 more days off. I am trying to get caught up. I have several new reviews that I am hoping to get posted today.

The Squeaky Grocery Cart is also hosting a Terrific Tailgating Party! My husband and I love to entertain and we love football, so we are really excited that football season is getting ready to start. I have already started sharing some great Chip and Dip recipes and an amazing Spicy Peach Chicken Wing sauce.

I didn't really have a high school sweetheart.

What is your favorite vegetable to eat?
I love sweet potatoes. There is so much that you can do with them and they just taste good.


Do you plan on dressing up for Halloween, if yes, what do you have in mind?
We always dress up for Halloween. Most of the time, I end up wearing one of my Star Wars costumes. Kids love it, so we always get asked to come help with different events.
That is my husband and I.

Are you a reality show junkie? If so, what is your guilty pleasure?
My favorite reality show right now is On the Road with Austin and Santino on Lifetime. Pawn Stars and American Pickers on the History Channel.

Dinosaur Train: Dinosaurs Under The Sea DVD Review




I recently had the opportunity to review Dinosaur Train: Dinosaurs Under The Sea with my children. This is one of our favorite PBS Kids shows, so it was not very hard to get them interested.

They are fascinated by dinosaurs! I have to admit that I enjoy watching Dinosaur Train with them! While they are learning about different species of dinosaurs, I am learning as well. Some of the dinosaurs featured in Dinosaur Train: Dinosaurs Under The Sea, I had never heard of.

I appreciate The Jim Henson Company and PBS Kids for offering quality programs like Dinosaur Train. The show encourages scientific thinking, as well as introducing natural science, natural history, and paleontology.

DVD Synopsis:
Buddy, a pre-school aged Tyrannosaurus Rex, and his adoptive family of Pterandons go for adventures on the Dinosaur Train to meet all kinds of dinosaurs in different eras and learn fascinating new facts about these incredible creatures. Touchdown Sunday Follow- Terrific Tailgating Chicken Wings

Welcome everyone from Touchdown Sunday. This week I have been featuring ideas for Tailgating. You can check out my Chips & Dips or Tailgating planning.

I absolutely love hot wings! I craved them daily when I was pregnant with my daughter. The spicier the better. I love to experiment with different types of wing sauce. This is my Spicy Peach sauce, which actually won a recipe contest.

Spicy Peach Glazed Chicken Wings

Chicken Wings (2-3 lbs.)
any kind of seasoning you prefer

Peach Glaze:
16 oz jar Peach preserves
1/4 cup mustard (yellow or dijon)
1/2 tsp of garlic powder
1 Tbs of Brown sugar
1 Tbs of Lemon Juice
1 tsp Louisiana Hot Sauce (I don't really measure the Louisiana Hot, I go by personal taste. Also you can use any hot sauce, I just prefer Louisiana Hot)

Season and bake chicken wings until done. For the sauce, put peach preserves in pot over medium heat until it melts. Add remaining ingredients and mix well, bring to a slow boil then remove from heat. You can toss the wings in the sauce or serve on the side for dipping.

Terrific Tailgating- $5/1 Varsity Snuggie!

Terrific Tailgating Recipes- Chips and Dip

Yesterday, I kicked off my Terrific Tailgating feature by sharing some tips for getting your tailgating party organized. Today, it is all about the food!

Chips and dip is an easy way to feed a crowd. There are thousands of different dip recipes, but I am going to share a few of my favorite.

Hot Wings are always a great tailgating food. This recipe gives a twist to the traditional hot wing. It gives you all the flavor, with a little less mess.


Buffalo Chicken Wing Dip

5 or 6 chicken breasts, baked, cooled, and shredded
1/2 of a 12 oz. bottle of Buffalo Wings Sauce ( I like Louisiana Hot Sauce wing sauce, but you can use any brand)
1/2 of a 16 oz. bottle of ranch dressing
8 oz. cream cheese
2 cups shredded cheddar

Preheat oven to 350. Spray a 9x13-inch pan with cooking spray.

Mix chicken with Buffalo Wings Sauce. Spread in bottom of prepared pan.

Melt cream cheese and ranch together in a saucepan over med-low heat until smooth. Spread over chicken. Cover with shredded cheese. Bake at 350 for about 30 minutes or until hot and bubbly. Serve with tortilla chips.



Guacamole is another favorite of mine. I love avocados! Finding ripe avocados can sometimes be difficult. Look for an avocado with a very dark green, almost black skin. Then see if it is soft. You don't want a mushy avocado, you just want some give. Be careful to press too hard, because it will bruise. If you find avocados that aren't ripe yet, you can help them along at home by placing them in a brown paper bag.

For traditional guacamole, I use the following:

ripe avocados
pico de gallo ( in most produce areas you can find this already prepared or make your own from scratch)
granulated garlic
salt & pepper

Peel and mash the avocados.
Add pico de gallo. If you aren't familiar with Pico de Gallo, it is chopped tomatoes, onions, jalapeno, cilantro, and lime juice.
Season to taste with granulated garlic, salt, and pepper.
For me, I like to add a little kick to mine. My secret ingredient is adding about 3-4 packets of Taco Bell Fire Sauce. I horde the packets whenever I get the chance and use them for cooking.

To add a little twist to your guacamole, try adding in some crispy crumbled bacon. It adds a little crunch, as well as a nice smokey flavor. I would suggest using less salt when seasoning because of the bacon's already salty flavor.

Don't forget to save the avocado seed! After you mix your guacamole, place the seed underneath your dip. This will help the guacamole from trying brown while sitting out.

For something a sweet and spice, I love making Avocado, Mango, Cucumber Relish. This goes amazing with chips, but I really love it on grilled chicken tacos.

3-4 Avocados- peeled and diced
2 mangos peeled, seeded and diced
2 cucumbers peeled, seeded, and diced
2 jalapeno peppers, seeded and finely chopped
1 large onion, diced
1 clove garlic, minced
1/4 cup chopped fresh cilantro
1 tablespoon lime juice
salt and pepper to taste

Stir together the avocados, mangos, cucumbers, jalapeno peppers, onion, garlic, and cilantro in a mixing bowl. Season with lime juice, salt, and pepper. Refrigerate at least 2 hours before serving to allow the flavors to blend.

You can adjust the amount of spice you like. Just depends on your taste.


Of course you can't forget about 7 layer dip, french onion dip, or another personal favorite artichoke and spinach dip. Those are always favorites too! Please let me know if you try any of these recipes or if you have a favorite dip, please share!

Let's get ready for some Terrific Tailgating!

I am getting ready to kickoff a "Terrific Tailgate" to celebrate all things football, college and professional. There is nothing better then a good football game, good friends, and great food!

My husband is from MN. So of course, we are Minnesota Viking fans! Yes, Brett Favre is a dirty word in our house. My husband still has a few choice words for Favre over losing a trip to the Super Bowl. I swear Favre is like the Energizer Bunny, now that he is back for another year. The man just wont give it up.

Me, well it is a long standing tradition in my family to love all things Atlanta Falcons. Who doesn't love the underdog? The Falcons are one of those teams that can start out great, then just fall apart. I don't know that there will ever be any hope for them to be a winning team. Although, there was the 1998! They did make it to the Super Bowl for the first time! lol They beat the Vikings to get there, which did not sit well with my husband. Of course the Falcons did not win, but gosh darnit they tried! There is always hope, however they played New England on Thursday and found themselves on the losing end of 28-10.

For college football, we are kind of all over the place. We live knee deep in Carolina/Clemson country. But we show love to the Golden Gophers, FSU, and Ole Miss.

Whether you are at the game or watching it at home, all Terrific Tailgaters need a game plan. Here are a few of my favorite tips for making tailgating fun and less stressful for everyone.

I always like to make dishes that will feed a large group. I love to make tailgate chili. Soups and chili are great way to feed a crowd. It is wonderful, especially on those really cold days when everyone is bundled up for the game. You can also consider dishes like potato or pasta salads, even macaroni and cheese.

If you are tailgating with a large group, go pot luck. Ask everyone what they would like to bring. This way all of the cooking and cost is not solely on one person. You will also have a great variety of food. Make a list and share it with everyone, so each dish is different. Not everyone likes to cook. So assign those friends a job they will be comfortable with it. It could be helping with set up and clean up, or put several in charge of drinks.

Shop together! Try and arrange for everyone to meet up to food shop and prep together. Consider it a pre tailgating party. Come prepared with your shopping list and meet up at your local Costco or Sams. Buying items bulk, such as meat, is a great way to help save money.
After your shopping trip, meet at a central location. You can start marinading meat or pre-make hamburger patties.

This is also a great time to check your master list and remind everyone of what to bring. Do you have enough containers? Are you grilling, do you need propane or charcoal for your grill? how many coolers do you need? It is always a good idea to have at least 2 large coolers. One for your meat or other items that need to be kept cool and one for drinks. Do you have enough paper products? (plates, cups, forks,napkins, etc.) Comfort items? ( chairs, blankets, small event tent, stadium cushions)

Stay organized and try not to get stressed out. The best part of tailgating is hanging out with your friends, eating great food, and enjoying some football.

eBeanstalk.com site review

It is so difficult sometimes to pick toys that your child or children will love.
I recently discovered Ebeanstalk.com. Ebeanstalk is a toy website that allows customers to search for products by age group. How frustrating is it when you just want to buy baby toys, but you have to sort through millions of toys for older kids before you find what you're looking for? Ebeanstalk is a toy website that allows you to search for the specific age of your child so you don't have to go through any of that hassle!

My children and I both were thrilled with the variety of toys. They both saw numerous items that they wanted to add to their Christmas wish list. I love the fact that the toys are educational and allow the child to have imaginative play. The website is easy to navigate and find exactly what you are looking for. My daughter really loved the pink Rody Horse.

S'more Cupcakes!


The Two Savvy Sisters



I found this recipe through Crazy Daisy's Tuesday Taste. It looked like something my kids and husband would love. S'mores are like the greatest ever and put that on top of a cupcake. You have something irresistible. I varied the recipe a little. I chose to frost with marshmallow fluff, instead of mixing half frosting, half marshmallow.

Ingredients:

1 chocolate cake mix
graham crackers
butter
marshmallows
chocolate chips
chocolate sauce
marshmallow fluff


Crush your graham crackers and mix with melted butter to make crust. I used a 1/2 of a stick and 1 package of graham crackers for the crust. set aside

Prepare cake mix to box directions.

Line pan with cupcake liners. Fill the bottom with a thin layer of the graham cracker mixture.

Then fill the cups with the chocolate cake mix. Top the cake mix with a sprinkling of chocolate chips. Bake according to box directions.

Allow the cupcakes to cool completely and frost with marshmallow fluff. Drizzle some chocolate sauce on top and finish with a toasted marshmallow.

Welcome to my Welcome Wednesday post! We are preparing for the Back to School Family picnic tonight at my son's school. I am really looking forward to it and I promised him I would make a special dessert. We are going to be making S'more Cupcakes today.

Deli Meat Recall

Zemco Industries has recalled 380,000 pounds of deli meat that may be contaminated with bacteria that can cause a potentially fatal disease, the U.S. Department of Agriculture announced Monday. The sandwiches in question were distributed to WalMarts nationwide. The USDA says that they have not gotten any reports of illness from the contaminated meat.

"Consumption of food contaminated with Listeria monocytogenes can cause listeriosis, an uncommon but potentially fatal disease," according to the USDA. "Healthy people rarely contract listeriosis. However, listeriosis can cause high fever, severe headache, neck stiffness and nausea. Listeriosis can also cause miscarriages and stillbirths, as well as serious and sometimes fatal infections in those with weakened immune systems, such as infants, the elderly and persons with HIV infection or undergoing chemotherapy."

The products under the recall are:

– 25.5-pound cases of "Marketside Grab and Go Sandwiches BLACK FOREST HAM With Natural Juices Coated with Caramel Color" with the number 17800 1300.

– 28.49-pound cases of "Marketside Grab and Go Sandwiches HOT HAM, HARD SALAMI, PEPPERONI, SANDWICH PEPPERS" with the number 17803 1300.

– 32.67-pound cases of "Marketside Grab and Go Sandwiches VIRGINIA BRAND HAM With Natural Juices, MADE IN NEW YORK, FULLY COOKED BACON, SANDWICH PICKLES, SANDWICH PEPPERS" with the number 17804 1300.

– 25.5-pound cases of "Marketside Grab and Go Sandwiches ANGUS ROAST BEEF Coated with Caramel Color" with the number 17805 1300.

The meats were produced between the dates of June 18 to July 2, 2010. The "Use By" dates range from August 20 to September 10, 2010.


The recall involves the Marketside Grab and Go sandwiches, not packages of deli meat. Walmart is encouraging customers to return the recalled products for a full refund. You can read more here.

Every time I look at the clock, I see 9:11 It is freaking me out!

For the last couple of months, every time I look at a clock in the morning it says 9:11. I have had it happen a few times at night as well. But, it seems like it is happening increasingly more. It really is starting to freak me out.

With my son in kindergarten now, I am so terrified something will happen at his school. My husband says I am over reacting. It is just a coincidence, and that my internal clock is regrouping at that time. That is why I notice it more. But I am really scared.

Has anyone had this happen? I would love to hear from others.

This is tough. I don't think music should be banned. The problem stems from radio stations over playing songs to the point where they physically make you ill if you hear them one more time.

my favorite gas station candy bar is Butterfingers. My favorite upscale chocolates: Sees Candy or Godiva.

Mine isn't bad. I had one wreck like 15 years ago.

What was high school mascot?
Mustangs!

What color socks are you wearing?

I don't wear socks. I hate things on my feet, plus it is 100 degrees. I am sporting some pink flip flops.

This is a tough one because it depends on where I am ordering from. There are like 5 different Chinese restaurants that I like, but I have certain dishes at each one that I like. These are my favorites: Vegetable Egg Fu Young, Mongolian Beef, Lemon or Spicy Orange Chicken, Szechuan Tofu with vegetables, Sesame Tofu, Honey Chicken, Chang's Spicy Chicken from P.F. Changs, hot& sour soup, #37 Red Curry with steamed tofu, pineapple and carrots 2 stars.
If the dish isn't already spicy, I ask them to add some spice to it.
5. Would you rather snowboard in the winter or swim in the summer?

I would rather swim, I am not a fan of cold weather.

Scavenger Hunt Sunday

these are 2 glow sticks that my children had. I thought they were interesting and played around with them myself.

It is hard to beat comfort food. I think these pancakes are a good representation of a relaxed and comfortable weekend.

My husband and I are in several Star Wars costume groups. My husband is Vader. He and one of our friends were goofing off while getting ready for a charity event.


sight

These are eyes from different species of geckos. We went to see a gecko exhibit at a local museum of natural history.



my R2 unit's optical eye. Plus it is a sight that you don't see everyday.

Not the greatest picture, but I loved how the colors looked. These are rainbow cupcakes that my children and I made.
